Baked strictly following instructions from an Heirloom Recipe,
these spectacular ensaymadas are baked by Chona Ayson
from a recipe that her grandmother,
Amparo Aguas viuda de Mercado,
mastered back in the 1930s,
I grew up enjoying the classic Hizon's Bakeshop
and our late Apo Cion's Home Baked Ensaymadas.
I don't suffer foolish mediocre ensaymadas gladly.
So when I say I'm impressed by an ensaymada,
that means its passed my absurdly high standards...
and this was certainly impressive:
loads of Marca Pato Quezo de Bola,
just the right amount of sugar,
on one of the softest, fluffiest,
most buttery buns ever.

who will hand over your box of ensaymadas.
then run back to your car,
tear off the wrapper of your first porac's best,
smile, close your eyes, take a whiff, and enjoy your first bite...
